Italian Stuffed Portabella Mushrooms

Ingredients

  • 1 pound hot Italian sausage
  • ½ pound extra lean ground beef
  • ½ red onion finely chopped
  • ¾ cup red pepper, finely diced
  • 1 medium garlic clove, minced
  • ½ cup dry bread crumbs
  • sea salt and freshly ground black pepper to taste
  • 1 ½ cups spaghetti sauce
  • 12 portabella mushroom
  • extra virgin olive oil
  • shredded mozzarella cheese

Instructions

In a large skillet, cook the beef and Italian sausage, onion, red pepper and fresh garlic. Cook until meat is cooked through and drain the fat. Take this mixture and put in a food processor with a steel blade. Process for about 3 to 5 seconds just to give meat mixture a bit of a finer texture. Remove meat mixture and place in a bowl. Add bread crumbs, freshly ground pepper and seas salt. Add the spaghetti sauce and mix well. Coat mushroom caps with olive oil. Fill mushroom caps with meat mixture. Place them in a non stick baking dish, cover with foil and bake at 350 F for about 25 minutes. Remove from oven and then sprinkle with mozzarella cheese. Broil these stuffed mushrooms with cheese on them until cheese is melted and mushrooms are tender. Makes 12 stuffed mushrooms.
