
Cake Layer
- 2 large eggs
- 1 cup granulated sugar
- ½ cup pure canola oil
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 tsp pure vanilla
Apple Layer
- 8 to 10 medium apples (you can use McIntosh or Cortland apples)
- 2 tsp pure maple syrup
- 1 to 1 ½ tsp ground cinnamon

Grease an 8-inch square pan. Pre-heat oven to 350 F. Peel and slice the apples in a glass bowl and toss with cinnamon and maple syrup. Place the apples in the greased baking pan. In a bowl, cream sugar and eggs; add oil and mix well. Add the flour, baking powder and vanilla. Mix just until blended. Add the batter over the sliced apples. Bake at 350 F for 45-60 minutes or until a skewer or toothpick comes out clean when inserted in the middle of the cake.
