Lemon Almond Tart

Ingredients
  • Soft butter for greasing the flan dish
  • 2 to 3 tablespoons of all purpose flour
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 1/4 cup ground almonds
  • 2 teaspoons ground cinnamon
  • Grated zest of 1 fresh lemon (rinse lemon well under cold water before zesting)
  • 2 tablespoons freshly squeezed lemon juice
  • 4 to 5 tablespoons icing sugar
Instructions

Preheat the oven to 300 F. Grease a flan dish with butter and then sprinkle the flour over the butter so that the dish is coated with a fine dusting of flour. Shake off any excess flour. Take the almonds and in a food processor, process until the almonds are finely ground. In a glass mixing bowl, beat together the eggs, sugar, lemon zest, lemon juice and cinnamon, until thick and creamy. Gently fold in the ground almonds. Pour the mixture into the prepared flan dish and bake for about 30 minutes. Leave to cool in the flan dish before removing. To serve – transfer to a serving platter and dust with icing sugar.
Serves 4.
