- 2 medium sized sweet potatoes, thinly sliced for quick cooking
- 2 Tbspns of fresh orange juice
- 1/4 to 1/2 Tspn of ground cinnamon
- 1 Tbspn of extra virgin olive oil
- sea salt and white pepper to taste
Bring lightly salted water to a boil in a steamer with a tight fitting lid. Peel, slice and steam sweet potatoes in steamer basket, covered, for about 10 to 15 minutes, or until tender. When tender, mash with potato masher, adding rest of ingredients. Serves 4.
