- 5 or 6 medium to large sweet potatoes
- 1/4 cup extra virgin olive oil
- Sea salt to taste
Heat oven to 450 degrees F. Cut potatoes into wedges. Place potato wedges into bowl with remaining ingredients, toss potatoes until evenly coated. Season with salt and pepper if desired. Place on baking sheet. Arrange seasoned potato wedges in a single layer on a greased baking sheet for quicker baking. For crisper fries, place potatoes at least 1″ apart. Bake until a bit golden about 35 minutes. Check for doneness often. Makes about 8 servings.
