- 6 basa steaks
- extra virgin olive oil
- sea salt and freshly ground black pepper
- 1 tablespoon of chili powder
- ½ cup of non fat yogurt
- ¾ cup fresh Italian flat leaf parsley, chopped
- ½ cup red onion, finely chopped)
In a bowl mix the olive oil, chili powder, yogurt, parsley, red onion, salt and pepper. Place the basa steaks in this mixture and coat well. Cover and refrigerate. Fish can be marinated up to 8 hours. Heat the grill, line and grease a grill pan. Place the basa fish steaks about 4″ (10cm) from the heat and grill for about 5 minutes either side – brushing with some oil to prevent them drying out. Makes six servings. Serve hot from the grill with roasted potatoes, mixed grilled vegetables and a salad.
