Put quinoa in a sieve and wash well under cold running water. Drain and place it in a pot with 2 cups cold water. Bring to a boil; cover, lower heat and simmer until all the water is absorbed about 15 minutes. Measure 2 cups cooked quinoa and add apple juice, raisins, nuts, lemon juice, and pinches of cinnamon and sea salt to taste. Simmer again covered for about 10 minutes. Remove from heat and stir in the vanilla. Chill. Serve as is or add berries or chopped apple and drizzle about a tablespoon of pure maple syrup on top. Enjoy. Makes 2 to 3 servings.
