
- 4 slices of whole-wheat or whole-grain bread
- 2 eggs
- 2 egg whites
- 3 to 4 tablespoons of skim milk
- ½ teaspoon vanilla
- 2 teaspoons ground cinnamon
- ½ teaspoon ground cinnamon
- ½ cup fresh berries of your choice
- ½ cup or more of low fat vanilla yogurt

In a bowl, combine all ingredients except the bread slices. Whisk the egg mixture with the spices until light and fluffy (about 2 minutes). Meanwhile, heat a non-stick skillet on medium heat on the stovetop. Dip one slice of bread at a time into the mixture making sure to cover all sides and edges. Place on the heated non-stick skillet and brown on both sides. Cook thoroughly. Top with fresh sliced strawberries or your favourite berry and a couple of spoonfuls of vanilla low fat yogurt. Makes four servings.
