Herbed Potatoes


  • 8 to 10 small red potatoes
  • 1 medium clove garlic, minced
  • 2 Tbspns freshly squeezed lemon juice
  • 1 Tbspn fresh oregano, chopped
  • 3 Tbspns fresh Italian flat leaf parsley, chopped
  • 3 Tbspns fresh chives, chopped
  • 3 to 4 Tbspns extra virgin olive oil
  • sea salt and freshly ground black pepper to taste


In a steamer with a tight fitting lid, bring water to a boil. Scrub the potatoes well and rinse under cold water. Cut in halves. Place the potatoes in the steamer and cook until fork tender, about 10 to 15 minutes. While the potatoes are steaming, mix the remaining ingredients in a bowl. Transfer steamed potatoes to a serving bowl and toss with the herb mixture. Serve hot. Makes 4 servings.
