
- 3 cups baby spinach, rinsed well
- 3 cups romaine lettuce, rinsed well and chopped
- 1 cup fresh strawberries rinsed well and sliced
- ½ cup fresh mushrooms, sliced
Dressing
- ¼ cup extra virgin olive oil
- juice of one orange
- 2 tbsp apple cider vinegar
- sea salt and black pepper to taste
- 1 small clove garlic sliced

Assemble all vegetables in a large salad bowl. Whisk the dressing ingredients in a cup and add to the salad. Toss and enjoy. Makes 4 servings.
