Grilled Summer Snapper

Ingredients

  • 4 to 5 medium sized Pacific Snapper fillets
  • freshly squeezed juice from one lime
  • freshly squeezed juice from half of one lemon
  • 3 tablespoons extra virgin olive oil
  • ¾ teaspoon paprika
  • ½ teaspoon cayenne
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon lemon pepper
  • sea salt and freshly ground black pepper to taste

Instructions

Preheat your grill. In a small bowl mix the extra-virgin olive oil, lemon juice, and lime juice. Coat both sides of the fillet with the oil and citrus mixture and set aside. In a small bowl mix the paprika, cayenne, onion powder, garlic powder, lemon pepper, sea salt and black pepper. Take the dry spice mixture and apply the rub to both sides of each fillet. Place the fillets on a sheet of doubled aluminum foil that has been oiled well with some olive oil. Place the foil with the fillets onto the grill. Grill for 5 to 7 minutes. Serve with grilled vegetables or salad. Makes 4 servings.
