In a large pan, sauté onion, celery and cranberries in butter and olive oil. Cook until cranberries are soft and starting to break down. Add remaining ingredients and stir well. Add salt and pepper to taste. Remove from heat and let cool. You can stuff the turkey or keep stuffing warm and serve as a side dish to the turkey. Makes 6 to 8 servings. Note: This recipe doubles easily but you if you are doubling the recipe, then you need to use 2 large pans to cook the stuffing.
