In a medium to large glass bowl add the shredded cabbage, red pepper and red onion. Toss well. In another bowl whisk together the vinegar, olive oil, honey or maple syrup, sea salt, and ground pepper. Slice the cored apple and dip slices into some freshly squeezed lemon juice. Add the apple slices over top of the shredded cabbage mix and toss. Drizzle the vinaigrette dressing and serve. Makes four servings.
