
- 6 cups of mixed baby greens, well rinsed
- 1 head of radicchio, well rinsed and cut into bite size pieces
- 3 medium Ya Pears, diced
- 2 Tbspns apple cider vinegar or rice wine vinegar
- 1 Tspn Dijon mustard
- 3 Tbspns extra virgin olive oil
- 2 Tspns maple syrup
- sea salt and pepper to taste
- Feta cheese to taste (optional)

Tear the greens and radicchio into bite-sized pieces. Combine greens and diced pears in a salad bowl. In a separate bowl, whisk vinegar and mustard. Add oil while whisking. Add salt, pepper, and sugar. Top the salad with crumbled feta. Drizzle the salad dressing on top and toss. Makes 4 servings.
