Heart Healthy Salad

Ingredients

  • 3 cups baby spinach, rinsed well
  • 3 cups romaine lettuce, rinsed well and chopped
  • 1 cup fresh strawberries rinsed well and sliced
  • ½ cup fresh mushrooms, sliced

Dressing

  • ¼ cup extra virgin olive oil
  • juice of one orange
  • 2 tbsp apple cider vinegar
  • sea salt and black pepper to taste
  • 1 small clove garlic sliced

Instructions

Assemble all vegetables in a large salad bowl. Whisk the dressing ingredients in a cup and add to the salad. Toss and enjoy. Makes 4 servings.
