Blueberry Fruit Crisp


  • 3 1/2 cups fresh blueberries
  • 3 cups fresh peach slices, peeled
  • ¼ cup apple juice


  • ½ cup almonds or your favourite nuts
  • ½ cup rolled oats
  • 1 cup pitted dates
  • 2 Tbspns apple juice
  • ½ Tspn cinnamon


Preheat oven to 400 F. Melt butter in 9 inch square baking pan. Add blueberries to the pan with the butter. Add maple syrup to the buttermilk. Mix well and set aside. In another bowl, mix flour, baking powder and baking soda with buttermilk. Add the buttermilk mixture and stir until mixture is moistened; do not over mix. Pour flour mixture into pan over blueberries. Sprinkle mixture with the two tablespoons of sugar. Bake for 50 minutes in preheated 400 F oven. Check to see that it is golden and toothpick comes out clean. It will make its own crust while baking. Makes 8 servings.
