Easy Bok Choy Salad with Asian Vinaigrette

Ingredients

Dressing

  • 1/2 cup water
  • 1/4 cup maple syrup
  • Juice of 1 lemon
  • 3 Tbs soy sauce
  • 1/3 cup extra virgin olive oil

Salad

  • 1 medium to large head bok choy, cut into bite-sized pieces
  • 1 bunch green onions, chopped
  • 1/2 cup slivered almonds
  • 5-ounces of chow mein noodles

Instructions

Combine the water and maple syrup in a saucepan. Bring to a boil, reduce heat, and cook 3 minutes, stirring constantly. Remove from heat and add the lemon juice, soy sauce and oil. Cool. Keep in the refrigerator until ready to dress salad. In a large bowl, combine the bok choy, green onions, almonds and chow mein noodles. Toss with dressing and serve immediately. Serves 4.
