
- 1 medium onion, sliced medium thick
- 4 medium cloves garlic, minced
- 1 tbspn of fresh ginger, minced
- 2 cups small broccoli florets, cut into about half inch pieces with no stem for quick cooking.
- 1 1/2 pounds of fresh snapper filet cut into 1 inch pieces (use thick filets)
- 4 cups finely shredded green cabbage
- 2 tbspn of fresh Italian (flat leaf) parsley chopped
- salt and black pepper to taste
- 1 tbspn of sesame seeds
Ingredients for the Sweet and Sour Sauce
- 3 tbspn of soy sauce
- 1/4 cup of rice vinegar
- 2 tbspn of mirin rice wine
- 4 tbspn of extra virgin olive oil
- 2 tbspn of maple syrup
- sea salt and black pepper to taste

Mix together ingredients for the sauce – soy sauce, rice vinegar, mirin, 2 tablespoons of the olive oil and maple syrup. Simmer in a small saucepan over high heat for about 15 minutes reducing to half the volume. Set aside. This sauce will intensify the flavour. While sauce is reducing prepare ingredients. Heat 2 tablespoons of olive oil in a stainless steel wok or large skillet. Stir-fry the onion for 1 minute over medium high heat, stirring constantly. Add garlic, ginger, snapper and continue to stir-fry for another 2 minutes. Add broccoli and continue to stir-fry for another minute. Add cabbage and continue to stir-fry for another 2-3 minutes, stirring constantly. Add sweet and sour sauce, parsley, sea salt and pepper. Sprinkle with sesame seeds. Serve over steamed rice. Makes 4 servings.
