Fresh Papaya Salsa

Ingredients
  • 1/2 of one ripe Maradol papaya peeled seeded and diced into ¼ inch cubes
  • 2 cups fresh pineapple cut into ¼ inch cubes ripe
  • 2 cups fresh pineapple cut into ¼ inch cubes ripe
  • 1 ripe mango peeled seeded and cut into 1/4 inch cubes
  • 1 small red onion peeled and cut into 1/4 inch cubes
  • 1 sweet red bell pepper, trimmed and cut into 1/4 inch cubes
  • 2 yellow chile peppers seeded and chopped (optional)
  • 1 tablespoon fresh cilantro finely chopped
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • pinch of sea salt
Instructions

In a large glass bowl combine all ingredients and season to taste. Cover the bowl and set aside for 20 minutes while flavours meld. Serve at room temperature or chilled. Great with pork, chicken, fish or lamb dishes. Makes about 3 cups.
